Artichoke is often considered a vegetable but it’s actually a thistle. More specifically, the bud of a thistle that is easily distinguished by prickly leaves. With a hard outer layer that gets softer closer to the center, artichokes are incredibly delicious once cooked properly. There are a number of health benefits associated with artichokes including improved digestion, lower blood sugar levels and boosting healthy liver function.
These can be boiled, grilled, braised or baked but the easiest way to cook artichokes is to steam them.
Storage: Refrigerate. A fresh artichoke will have tightly bound leaves.
